Roaster's Notes

After an eternity, we finally landed a beautiful Sulawesi Kalossi coffee.
It is a rare and exotic coffee that should be on every coffee lover's bucket list.
This Indonesian will undoubtedly hit the spot for those who enjoy bold, rich, robust coffees.
Grown on a small island, processed by the traditional Sumatran method of wet-hulling, this fantastic coffee has a broad array of flavours wrapped in a rich body.
It is a delicious-tasting coffee to savour long after the final sip.
Like all wet-hulled coffees, Sulawesi requires a much finer grind. For those of you new to using Single Origin Sulawesi coffees, please ensure you set the grinder fine enough for espresso extraction/
Other brew methods are less sensitive to the grind setting.

AusPost Express option available.

Shipped fast - orders received before 3pm sent same day.

Orders will ship via AusPost or one of our courier partners.

We care - all orders are packed into cartons to protect. Never satchels.

How shipping costs are calculated : Shipping charges vary and there is no flat rate. Carriers use destination (your postcode), the cubic volume (size) and the weight of a parcel to determine cost.

We try our best to offer the most competitive rates.

When will my parcel arrive : Unfortunately, it's not possible to supply accurate delivery times and we suggest checking the courier websites for the latest transit times.

We promise to get your order ready super-fast, nothing hangs around waiting.

Generally, we pick, pack and ship your order within an hour during our work shifts.

Tracking: You will receive notifications and tracking details via email as we pick and ship your order. Once we hand over your parcel to the courier they will keep you informed as the parcel makes the journey to you.

Why we are faster: We get it, nobody likes waiting for deliveries, especially coffee.

Our large size enables us to have direct access to a high-speed hub that bypasses Melbourne Parcel Facility - a source of delays. We can't guarantee all parcels will bypass MPF as this is subject to route plans by the courier.

It is possible to reduce 1-2 days from the transit time by helping your parcel arrive sooner.

Suitable for : Espresso, Stovetop, Drip/Filter, Percolator, Plunger

This coffee has X-factor in spades. Interesting and alluring in it's charming sweet flavors. All round excellence.

Description

Sulawesi - a rare coffee legend returns.

Buy 500g or 1kg of our 100% Arabica Sulawesi-Celebes Kalossi Grade 1 (also known as Bukit Marante) coffee today.

A rare and exotic coffee, we are thrilled to share this unique lot with our wonderful customers.

It has been a long wait to secure a decent lot - 6 years seems like forever.

These coffees are wild-grown in the ancient Toraja region on the small Indonesian island of Sulawesi (sometimes known by its Dutch-appointed name Celebes).

Sulawesi Kalossi is a super punchy coffee with low acid, rich and bold body, sublime dark and earthy notes of chocolate, spice, and cocoa with nectarine and white grape acidity.

Indeed, it is a "bucket list" coffee experience.

Perfect for hard-hitting espresso enthusiasts, a coffee with complex candy sweetness contrasting the heavy body and earthy tones.

Using Sulawesi coffee.

Sulawesi is similar to other Sumatran coffees processed using the traditional wet-hulled method.

Like all Sumatrans, Sulawesi Kalossi requires a finer grind setting and more extended de-gas from the roast date to allow flavour development and stabilization.

Typical rest periods for Sulawesi coffees are 7 to 10 days from the roast date, which may reduce slightly in warmer weather.

All wet-hulled coffees undergo a series of "rapid flavour transformations" during the de-gas (first week after roasting).

Flavours can change so fast and dramatically from day to day that you would hardly recognize the coffee one day to the next in the first ten days from the roast date.

These most significant reactions occur between days 4 and 10 from the roast date.

At certain times, the coffee may appear less than optimal, or it may even taste weird.

Still, it's just a normal part of the standard lifecycle in reactions of fresh roasted Sulawesi and Sumatran coffees processed by wet hulling.

Then suddenly, the coffee turns nice, a wonderful experience.

If you ever encounter any of these responses from freshly roasted coffee, please wait a few days for the development period to complete.

The rewards will be well worth it.

Sulawesi is now very difficult to source. This was the last and freshest shipment available anywhere in Australia.

mycuppa uses a full cast iron coffee roaster for maximum flavor and sweetness

Why our coffees are different

Our custom SUPA-ROASTA is a one-of-a-kind, fully cast-iron platform using the most advanced computer controls for ultra-precise roasting of the best-tasting coffees.
These days, complete cast-iron roasting systems are extremely rare. Only cast-iron platforms can impart that highly desirable soft, moist heat into the coffee beans.
Would the best chefs and BBQ experts cook their culinary delights on Stainless, Alloy or Mild Steel or Air ?
Nope, neither would we.
mycuppa's SUPA-ROASTA creates coffees with smooth, rich, high-flavoured tastes, full and syrupy body, fine acidity and of course our trademark long, sweet finish.
Nothing compares.

how we roast your coffee

Roasting coffee is a precise science. These days, computer profiles perform most of the automated tasks for controlling a roast profile. However, through better quality control via tasting, testing and optimization, we can make a big difference to the finished product through setting special parameters.

mycuppa explains the delicate balance when roasting coffees for exceptional flavors

See how our coffees are roasted so beautifully

Whole bean coffee stays fresher for much longer than ground coffees

Ground coffee is poor value

Whole beans are the only way to enjoy freshly roasted coffee.

The moment coffee beans are ground, most of the essential, active compounds in ground coffee oxidize rapidly, losing vitality, aroma, flavour and body.

Ground coffee barely lasts 15 minutes; even sealed packs lose more than 80% of the critical essence in 2 weeks.

Unfortunately, once you open and close that pack, it's game over, and the ground coffee continues to stale at 20x the rate of whole beans inside of a sealed, unopened pack.

If you love coffee, please don't waste money buying pre-ground packs; you only get a small part of the wonderful coffee experience.

Buy a decent grinder and purchase whole beans; it makes a huge difference in aroma, flavour, and enjoyment.

Has good flavor.

It is sweet tasting and decent flavors. I prefer more fruity tasting coffees that are lighter. Otherwise was as described by the seller and deserving of 4 stars.

Interesting taste

First time drinking a single origin coffee. Gave this product a try and it is different to what we are used to. After a few days of drinking it we liked it even more.
