Why we are faster: Yep, we get it, nobody likes waiting for deliveries, especially coffee.

Our large size enables us direct access to a high-speed hub to bypass Melbourne Parcel Facility - often a source of delays. This applies for most parcels, but we can't guarantee all parcels will bypass MPF as this is subject to change by the courier.

Sometimes we can reduce 1-2 days from the transit time and that goes a long way to helping your parcel arrive sooner.

As one of just a handful of capsule plants in Australia, we have complete lifecycle control of the quality.
It all starts with our 20 years of experience sourcing high-quality raw coffee, roasting in our best-in-class facility, de-gassing, grinding, conversion to capsule and retailing.
Many coffee brands and retailers in Australia need help to manufacture their coffee capsules or pods.
Instead, they must use an external company to convert coffee or outsource the entire process, including raw coffee selection, roasting and packaging.
It is outsourcing the manufacturing of products that results in brands losing critical control of quality.
You would be surprised to learn that many of the largest coffee brands do not make capsules and settle for inferior supplies.

Freshly Roasted by Melbourne Coffee Specialists

Mighty Moka is freshly roasted in Melbourne using a roast profile developed specifically for capsule brewing.

Coffee behaves differently inside a capsule compared with a traditional espresso machine. The coffee selection, roast development, resting period, grind and extraction rate must work together within a small dose.

Drawing upon more than 40 years of coffee roasting experience and around 15 years of capsule development, Mighty Moka has been created to deliver smooth flavour, reliable extraction and satisfying body in compatible domestic machines.

The coffee is packed in distinctive metallic blue capsules and sealed into convenient 15-capsule packs to help maintain freshness until required.

Many strong coffee pods rely on extremely dark roasting to create intensity. While this can make the coffee taste powerful, it can also introduce burnt, ashy or overly bitter flavours.

Mighty Moka achieves its character through careful coffee selection, blending and roast control.

The objective is not to create the harshest capsule possible. Instead, Mighty Moka delivers a richer, more complete cup while preserving balance, sweetness and drinkability.

Nespresso-Compatible Capsule Format

Mighty Moka is designed for most original-line Nespresso-compatible machines.

It is not compatible with Nespresso Vertuo machines, which use a different capsule shape and brewing system.

Compatibility may vary with some commercial, integrated or modified machines, so please check your machine type before ordering.

Brewing Recommendations

use the espresso or short-cup setting;
preheat the machine before brewing;
clean the capsule chamber and outlet regularly;
descale the machine when required;
use fresh water;
add hot water separately when preparing a long black.

Avoid pushing a large volume of water through one capsule, as this can make the coffee taste thin or bitter.

Full control over quality

We started making portion-control coffees in 2009.
Despite creating amazing espresso coffees, portion control was an entirely different beast.
Capsules use lower dosages (grams of coffee per serving), so coffee roasters must be more creative and flexible.
There are only a handful of capsule manufacturers in Australia, yet more than 1000+ brands sell capsules. Third-party providers either roast and create the capsules in-house or take roasted coffee from brands for conversion, returning the finished product to the roaster up to a month later.
It's largely a black box process with limited ways to control both quality and freshness.
Most coffee brands in Australia selling capsules, even the larger, well-known brands, do not roast the coffee inside their products. Instead, they rely upon the capsule converter to use coffees of unknown grade, as it is cheaper to use these generic capsules. Capsules are placed in attractive packaging, making it impossible to differentiate them from name brands.
That's a deceptive way to sell coffee: using the reputation earned in other segments to sell generic capsules they did not manufacture.
When most Nespresso-compatible capsules use a product made by a single supplier, it's no surprise the taste will be similar.
So, in 2019, we began building our capsule facility with special controls, grinders, and degassing chambers, focusing on premium quality coffees.
We are one of Australia's few vertically integrated capsule sellers who can control the entire end-to-end process.
Our capsules taste sweeter because the quality of our ingredients is superior to that of the rest of the market.

In our 17 years of working in portion-control coffees, we have learned an incredible amount about how to best protect and preserve the critical aroma and flavour compounds from freshly roasted coffees.
Over the last six years, we have exhaustively tested numerous coffee capsule base and lid solutions from European suppliers. Most of these were compostable materials that failed to preserve the coffee's freshness to our minimum standard. The lid materials, in particular, were prone to leaking volatile compounds in fresh coffee.
The compostable capsule segment is moving quickly, and improvements are forthcoming, but there are still many compromises when using compostable materials for freshly roasted coffees.
Our current system uses a hybrid EVOH and foil solution to fully protect the ground coffee inside the capsule from staling. In fact, it performs almost equivalent freshness barrier protection to aluminium, with the added benefit that our capsule base has a 40% lower carbon footprint compared to aluminium.

Roasting coffee is a precise science. These days, computer profiles perform most of the automated tasks for controlling a roast profile. However, through better quality control via tasting, testing and optimization, we can make a big difference to the finished product through setting special parameters.

Roast Balance

Roast depth is a moving target for most coffee brands. It can depend upon the individual lot being roasted, ambient conditions (hot or cold) and the target brew application.

Our roast depth always targets medium (except for filter roast products that are roasted lighter).

Our medium-level roast is a combination of many factors, such as the balance of flavour, sweetness and acidity.

Roasting too far in one direction tends to pull or detract from other attributes.

Roast Profile

Our roast profile has evolved and optimized over the last 20 years.

Not much has changed in the last few years as the level of quality has essentially maintained at a consistently high range.

We roast for a medium level that takes all of the attributes into consideration - flavour, complexity, sweetness, acidity, body, aroma and finish.

Our roast profile could be described as carefully cautious - unwilling to push into zones that create an unbalanced cup taste.

Colour

Roast color is an outdated metric which no longer applies to quality coffees.

The external color of a roasted coffee bean bares little resemblance to how that coffee was actually roasted.

In the past, coffee was segmented as light, medium or dark. But those motifs did not sufficiently encompass the number of variations possible.

The external shade of a roasted coffee is more influenced by the brix (sugars) of the bean, e.g. higher brix levels may present or display darker shades of brown when roasted.

The processing method also plays a role in determining the final colour. Washed coffees are darker in shade, as are Decaf coffees, while naturals display a lighter and mottled appearance.

The roast profile also impacts the finished colour. A lighter-colored coffee may have been roasted poorly, having baked or stalled with darker internal colours.

Similarly, a lighter external color might hide the darker internals from scorching or rapid roasting using an invalid profile.

Dark does not mean stronger. In fact, dark is weaker as acid and caffeine levels decline.

Acidity

Acidity is perhaps one of the most complex and mis-understood attributes of roasted coffee.

Acidity is a fundamental requirement for flavor, in fact acidity is the pathway of flavor compounds.

Customers often ask for low—or zero-acid coffees. However, those coffees with very low acidity typically display dull, mediocre, and boring cup elements.

Australian coffee drinkers are predominantly milk or dairy alternative drinkers. In fact 93% of coffee drinkers add something else to the coffee besides sugar.

Acids are mostly grouped as citric or malic. When coffee is roasted well, the acidity should result in delicious sweetness.

However, the extraction or brew process can also affect the taste.
